    I think the reason I have never attempted Skeeter Pee is because don't you need a yeast cake
    from a white wine? I don't make wine, (especially whites) so I don't know what would be a good
    way to over ...

    let it age, dont dump it or try and make something else with it, bottle it up and sit on it for
    a ew months...chances are that it will turn out good.

    Left hand has done it. bottled beer with nitrogen and poors like it was dispensed from a stout
    faucet. picked up a 6er at whole foods, The left hand rep was there and he had said there was
    a new way...

Ahh so you are brewing more. Nice! Well i leave the jugs in the fridge over night usually to make sure they are nice and cold. But before i add the wort to the carboy i put the pot in my sink
which is filled with ice. I let that sit (top on) for quite a while before i even attempt adding it to the cold water in the carboy. What kinda beer you making?

Sounds like you already have it in the carboy and it is still too hot... In that case sounds like you are doing the right thing. Just get it down into the 70's before you pitch the yeast.
