I started home brewing in college while at the same time I was studying chemistry (a great tool set). During this time, I gained experience in all grain brewing, growing hops, yeast culture, building equipment, etc. After graduation, I quit brewing for a few years while I traveled. After purchasing my home, I set up shop in my garage where I continue to expand my knowledge on brewing. I also started to keg my home brew which has taken the hobby to a new level of satisfaction and efficiency.
I enjoy all styles. Currently, I am interested in brewing experiments that will yield great brew as well as confirm or deny existing brewing dogma. I encourage my fellow home brewers to experiment and post your data. Data is good. This will foster a more educated, aware, and creative brewing community. -

Everything goes out the window with lambic brewing, and I don't think anyone can give you an
absolute answer. I say go for it, leave it at room temp. I've found that it's mostly ambiguity
