I just had the idea of caramelizing my honey before making mead, in order to give it some
nutty/toasty notes. Anyone know of any obvious cons to this method, before I try it?

The only preservatives that you have to look out for, as far as I know, are Sodium Benzoate and
Potassium Metabisulfite. If neither of these is explicitly listed in the ingredients, you're
good to go!...
