So i took my 14 month old blonde sour off the roselare/dregs(a lot) cake and added to 2 oz

I ended up not touching it and as of this morning there was a krausen that has grown throughout
the day and it seems to be chugging along nicely. thanks for the help

Give it one more day, then I'd start to worry. 8.5% is a little high, and I'm sure it killed
the lacto, but the pedio will remain, and the smaller population of sour bacteria should

Got it from a local brewery its a francois feres barrel, compared to others it looks unused
until i looked inside and for a medium+ toast it looks pretty raw(guessing it was steamed out).

sounds like you overprimed. The damage is done as far as being overcarbed just stick them all
in the fridge and open them over the sink.
