Just built mine, and used 16GA throughout. According to the label on my chest freezer, it only
draws 5 amps, so I figure 16GA ought to cover it. Haven't actually tested it with a full load

I dry hop in the primary after all visible fermentation has stopped (like at the 14 day mark).
Then I let the hops sit in there for a week, then transfer to secondary for a couple more
