Probably just evaporation. The three piece airlocks lose water MUCH more quickly than the one
piece S type air locks.

You are exactly right, it is the cane sugar. That is a LOT of sugar added in to that recipe.
Unfortunately, there is nothing that I know of to get rid of that taste...

In relatively small quantities, yes you can. I would suggest no ore than 10% of your grain
bill, maximum. Too much sugar can make the beer cidery, it will also dry the beer out making it
