  • I brew mostly IPAs right now but stouts are next on the menu. I do all grain brewing but I have no problem using DME to help me bump up my gravity. LOVE hops and I'm growing four different plants this year. I plan on sending many samples out for competitions this next year. My brewry is down as I have just moved into a new house and I need to get things in order first. I plan on kicking off the first batch around mid March 2010.

    My 2IPA has a high alcohol warmness to it. I have read that this will mellow with time. Should

    Test out your hydrometer in water. Then pull a sample of your beer and check it outside of the
    demijon. My money is on a busted hydrometer.

    I think it's just letting off exess Co2 it should chill out pretty soon. The bonus is that will
    help drive off any O2 that is in your secondary.
