    I would say it depends on your taste in beer.. I love west coast pale ales, so I went with
    Cascade since I was only growing one plant.

    I think you would just need some kind of spacer to take up the extra space. Along with longer
    screws. I don't think it would look pretty, but you could for sure make it functional.

    If anything too much sugar would over carbonate the beer. Bottle carbing can take anywhere from
    2-6 weeks, just wait it out.

    24-36 hours @ 30psi usually works for me.
