I've used good ole safale05 and lav 1118. I like safale 05 because it's flavor is very neutral

Could always keep a store bought jug of water on the side in case. I've done that, boiled
water, and have added it from tap.....so far, no issues. I started with the BBS kits. I love

Especially with lime. I made a cider once and chopped up a whole lime and added one per gallon.
