I started a 3 gallon batch 4/9, racked 4/29, and bottled 5/13... My wife and I have been

Forgot to mention... I used a dry pack of Nottingham yeast... everyone is surprised how well
this turned out... think I'll save a few to enter in a contest.

From my limited experience, the DME or LME is going to get you to a specific style of beer. Mix
Wheat with Amber, go all Light, a little of each, its going to be beer no matter what. I have

I would say take a sample of young beer, adding small measured amounts until you find the taste
you are looking for... then scale up your measurement... then again I like sampling
