I set my mill to .035" (thickness of a credit card) then double crush the grains. Works great
for me.Same here with a 3 roller mill.

You did every thing right just use it the longer you let it sit the more flavor you lose. The
time in the oven is necessary as it drives off the acetic acid from the smoke.

A whisk breaks up dough balls better than a spoon. You may need a bigger one than normal
