W'guy, it sounds like you did a good job as well. I also ended up with just under 5-gal. in
each batch. My Scottish was boiled in a borrowed pot and I had to guess at the volume. And I

I would not mash one day and boil thee next. Wild yeast and lacto will go wild overnight and
your flavors will be off. As for quantities of water, that requires a bit more information
