I have to name every beer I make, which is almost a chore after awhile, but I still have to do
it. Most of the time, I go with some current event in my life at the time I brewed the beer.

The recommended amount that I've read to initially carb the beer before putting it on gas is
1.2. Given that you've carbed it well past this with co2, you should de-gas it for a while
until you get it...
