the alcohol smell is from the sugar being added and just a young cider. you can bottle after
two weeks but it will be cloudy and need more time to age. the sugar added will make it need

because emptying all those bottles into the keg would certainly oxidize the heck out of it. if
you tried to pour very carefully, you would only lose 30% of the body if your lucky. best

since it is february, you probably are using store bought juice. you can easily turn around
store juice from ferment to drinking in one month AND with 10 grams of dry yeast, no problem.
