- Got into brewing back in 2005 when my wife finally got tired of hearing me 'talk' about brewing my own beer, so she bought me a kit and I have been hooked ever since. Started with an extract dunkel for my first batch, and have a passion for german beers, oktoberfest, bocks, etc. My first all grain setup was using a bag in bucket which worked pretty well, but I have advanced to a large cooler and manifold setup and march pump system. I am still in the process of creating a HERMS system, just need to clear some space. I have tried many different recipes and styles, including oktoberfest, dunkel, bock, browns, scotch ale, stout, and several others. I recently took home first prize in the German Wheat and Rye category at the Bluebonnet Brewoff, along with a third in American Amber Ale.
- I already have a Maibock in the secondary in my spare fridge, and plan to use the harvested yeast for several brews, including Bock, Dopplebock, and an Oktoberfest. hope to buy several bags of grains in the near future so I can continue to rotate my beer inventory and enter into any upcoming competitions.

One thing that might help, if it wasn't brought up, is to pull the wort to your boil pot
slowly, like one gallon every 12 minutes or so. I regularly pull 7.5 to 8 gal of wort, so this
