You can always add water to replace what was boiled away to bring the level to where it was
intended to be. Three weeks bottle conditioning is normal.

I'd use the cleaner that they gave you, it's probably a no rinse cleaner as opposed to the
bleach which must be well rinsed to prevent off flavors.

No need to use bleach I don't think it's good for aluminum, it forms aluminum oxide.

Soap and water will clean the pot, boiling water in it sanitizes. when you brew beer you boil
water. No problem.

Using Brewer's friend calculator, your OG would be 1.059 and your FG 1.017, with a medium
attenuating yeast. Looks like your OG reading was bogus. Your ABV would be 5.6%. Cheers!:mug:
