  • I am an all around kinda guy. I Brew, Blacksmith, Leatherwork, Woodwork and I am a Web developer. I like having fun with friends and usually bring something new to drink to the table on most occasions.

  • Introduction to Brewing: I got into home brewing back when I turned 21, I worked the northern and southern California Renaissance Fairs and I had a lot of friends who did it and were older. So I asked if they could help get me started, for the first 2 years I brewed Beer, Cider and Mead. I don't remember all the stuff I tried back then. but then when I moved I kinda gave it up until 2011 when I really wanted to get back into it again. Brewing Setup: In the past I used my friends equipment and they had a nice setup. As of now I am currently setup for Meads, Ciders and Wines mostly and I'm using 5 Glass Carboys and 4 Brew buckets, I also have 11 one gallon carboys for experiments. I usually always keep one carboy open for when I go to rack, I also have all the small bits and bobs for testing ABV and so on. The recipes: well I started brewing again with a peach melomel kit from Midwest Supplies. Since then I have done a Cherry Mead, Spiced Mead, and Blueberry Mead all on my own. I am also helping a friend learn and we are brewing a Buckwheat Honey Mead for Him. I have also just gotten into Ciders and Apple Wines again, I have 4 one gallon batches going. 2 of Hard cider and 2 of Apple Wine, all of them are using different yeasts to see what kind of profile I like for them.
  • Future Recipes: I am planning to Brew a Stout Graff soon that I have been working on the recipe for, if it works I will post it here. I also want to brew a Pumpkin Ale and a Pumpkin Mead.
  • Buckwheat Honey Mead, Cherry Melomel
  • 2 Hard Ciders, 2 Apple Wines
  • I still have 2 bottles of my first mead back to brewing, it is a Peach Mead and 1 bottle of Blueberry Mead.

    That's good to know on the K1. I have only done about 10 mead's, so I am still experimenting
    with a lot of yeasts and so on. The 3 yeasts I listed were just ones I have tried and liked.

    Lalvin D47 or EC1118 or if you want to try something really different and Irish Stout yeast.

    Safale S04 works well. I have done 3 batches with it now and they all taste great. 2 batches
    were Apple Wines and 1 was a regular Hard Cider.

    Well if it was just 5.5 gallons of apple juice, then your OG should be about 1.044 and would
    put the FG around 1.000. So you would end of with about a 5.8% ABV. If you decide to back

    I also saw some Pineapple Peach Mango Juice from Dole at Sams club, there were no preservatives
    in it. Just thought I would post it here incase you may want to try a juice route.
