  • While sitting at the local watering hole, I got into a conversation with the wise man that perpetually sits at the end of the bar. We spoke of women, beer, and our beloved Phillies. Many brilliant ideas were discussed and it was then he told me of the two types of people in this world: the talkers and the doers.

The drunk prophet explained further. One guy will reminisce about the perfect girl that got away while the "doer" actively pursues the babe of the century. A loose-lipped bull****ter might sit on his bar stool and proclaim his least favorite domestic draft, while the go-getter perfects his own home brew.

I took this to heart. The next day, I called Wendy Peffercorn and started brewing beer.

What was your process like for the ranching? If there are signs of activity (bubbling or
krausen) I would pitch it or put it in the fridge after 24 hours.

I realize its been awhile since you posted this but I wonder the same thing when converting to
partial mash. One example: A recipe called for #1 wheat DME and #1 amber DME (late additions).
    I switched...

Jafo, this is pretty generous of you. I have been wanting to make or buy a fermentation chamber
for a while now. I'm from Bucks county PA and I'd be willing to it up. I could also drop off
    some great ...

My tip for you is to use a lesser amount of chips first. I would hate if a barley wine, that
took months to make, came out with one flavor dominating. Use an ounce or 2 for month before
    you bottle. If...

  • Posted in thread: Altbier dryhop? What do you guys think? on 11-28-2011 at 08:03 PM
It's all about your hop preference. One thing I've done before dry hopping with certain hops is
to make a hop tea or just a hops and water solution. Just to test it out. There are many
    threads on hop ...

There should still be enough yeast in suspension to cabonate your bottles. You could cold crash
for a month and still have enough. However, you may want to adjust the amount of priming sugar.
    Here's a...

You figure 6-8 weeks for most ales. (1-2 primary, 2-3 secondary if necessary and 2-3 weeks in
the bottle). You may be able to drink one on Christmas but it will not taste the way you want
    it to. Brewi...
