a friend severely overestimated the amount of propane we'd need, so I have about 5 leftover

Any american citrusy hop goes well with Simcoe but I've made a American/UK hybrid IPA that
blended Fuggles, Northern Brewer, Simcoe and Cascade hops and it was very very tasty.

They would only break if you crammed them tightly side by side but if they are just touching
you should be fine.

If you are trying to add IBU then dry hopping won't do that for you. You'll need to boil a hop
tea and add that to your beer. That can be calculated using beersmith.
