I do a combination. I brew 10 of anything I've brewed previously or that I have reason to think
will turn out well. For screwing around I also brew small batches (between 1 and 2.5 gallons).

I've left them for a few days on occasion (New Years is always bad), they're still simple
enough to clean up, but cleaning them right after they kick is much easier.

Why not do a mixture? When I'm doing an IPA I often mix hop extract (which is smooth like
magnum) with some chinook or columbus to add a bit of a 'rough edge' to the bittering.
