  • I'm partial to beverages that include apples and/or honey.

  • A buddy of mine got me interested and when I was deployed I did a large volume of research and math to compute my potential savings. I got home and 1 month later I was brewing my first apple wine. That was this passed January and since then I have engineered a few brews and have decided that this is something I will be doing for a long time. Bonus: SWMBO got to taste her first sample of my PAA cider and my orange blossom cyser and told me I need to brew "...more. LOTS more." Five gallon batches, here I come!

So I've had the good fortune of coming across about 2 1/2 pounds of Sonoran Desert mesquite
honey. Unfortunately I'm torn in far too many directions to decide what to do with it. I've
    done very well w...

I did a 1.5 gallons of this. The only changes I made were using granulated table sugar instead
of corn sugar and only 1 cinnamon stick. I had an OG of 1.100, used safale us-05, and after 3
    weeks it st...

Wow. As if I didn't have enough research on my plate. But it sounds like this is far more
important than types and variances of honey. What about over pitching? I've been told it is fine
    to use a full ...

I do believe I'll be making this. Although the technical term for this (absolutely tastey)
beverage would be a cyser, not a mead. Either way, this will be bubbling away in my primary by
    sunday. Cheers...
