Just a guess as I am just getting into mead myself, but split the ingredients down to the batch
size you want to produce. Most cooking is all about ratios, so if you maintain the ratios
    (reduce everyt...

Many true abbey and Trappist dubbels are brewed, bottle conditioned, and out to distribution in
a matter of weeks, two months at the most. I have done Maredsous clones that tasted pretty
    close to the ...

If it's "syrupy and sweet", it's underhopped (underbittered). The hops added at 60 minutes are
added to balance the sweet malt. It's not a good recipe, to be honest, and that is why the beer

Cold crashing helps. But I was a n00b not so many months ago, and i got a lot better at racking
over time. And with floaties in the beer, a filter bag over the end of the cane can really

    However for a 2.5 ga...

so best to make a starter and pitch at 72 hours if no signs of fermentation have started?
reason im worried ive ALWAYS seen wlp001 take off within 24 hours. what about oxygenation of
    wort before pitch...

The exact units by style is less of an issue than it seems. Shoot for 2ish. When in doubt, try
google, "brown ale co2 units" for example. As for filtering, try tying a hop sock or 1 gallon
    paint strain...

Why would you pitch a starter before you saw activity?

That recipe sounds like a complete mess.It looks like its somewhere between an APA and an IPA.
What yeast? What time is the hop addition? How big is the batch?

I would wait for a stable gravity. My recent saison went below 1.000 with 3711
