After racking my Belgian blond I noticed the next day that there was a red hue at the top

Krausen won't harm your beer. In a few days it will just subside anyways. No worries.

The starting gravity was said to be around 74 points and when I put that in a pitch calculator
it said I needed around 250 Billion. So if I did under pitch it, is it to late to add more
