I find AG to be easier. I'm much more relaxed when doing AG than extract. Watch your temps and
check a gravity sample pre boil and post boil. I chill them before actually measuring. Other

I, too, fight the 7.5gal pot issue. I boil with 7gal to start. As it nears boiling, I keep one
hand on the gas regulator and the other hand on a spray bottle of water. Have done 3 batches

I learned that if you fill a keg a little too full, it an be pretty messy when you purge it.
