Thanks for the response. I ended up biting the bullet and driving 2 hours round trip to the
nearest brew store. Bought 2 pkgs of Nottingham which is certainly more appropriate for the
style I'm making...

lb Crystal 1501oz Fuggles 60 min1oz EKG 151oz EKg Flame OutI planned on using Nottingham yeast.

gallons), so I don't think efficiency suffered. Why do they suggest doing the protein rest if

I'm brewing Northern Brewer's Honey Kolsch and forgot to conduct the 122 degree 20 minute rest.
Recipe is as follows:9 lbs German Pils1 lb Weyermann Pale Wheat2 Oz Hallertau @ 60 min.1 lb

I received a hydrometer with the kit and the specific gravity was 1.050 before I sealed up the

On Saturday night, I boiled up my first batch of beer from a extract malt kit (True Brew IPA).
I believe I followed the instructions accurately except on the advice of a friend, I
substituted a WLP-00...
