Head space is only an issue when you're bulk aging wine. If you age in the bottle after
secondary and clearing then you have nothing to worry about.

Bottom out your serving pressure to 1-2 psi. You'll get good pours from it.

It will clear in the secondary given enough time. But me personally I like to add a pack of
super kleer to drop it all out and bottle it from there to save my space in carboys for aging .
