  • I've been homebrewing for thirty four years now. I started working at DeFalco's within two months of starting. A few months later, I was working here full-time, a year later, I became the manager. In December 1980, I bought the shop and haven't look back since. I have been on the Board of Advisors for the American Homebrewers Association and have been active in the trade association (now-Fermenters International Trade Association, was-Home Wine & Beer Trade Association) for over 30 years. I am currently serving as the vice president of the association, although the organization seems to be in hibernation mode currently. Over the past three decades, I have helped tens of thousands of customers learn to make their own beer, wine, mead, & cider. Over two dozen customers and employees have gone on to become professional brewers and around ten professional winemakers. Personally, I brew all kinds of beers, but am partial to hoppy IPA's, Porters, and Barleywines.
  • Hopefully, more hoppy IPA's, Porters, & Barleywines!
  • Just bottled a porter last night!

. . . I started with the Bewitched Amber as I'm not familiar with Pale Ale and not a fan of the
hoppiness of IPA's. Question is for a guy on a budget what are some cheap ways to maybe modify
    the Pale ...

Why did my first batch turn sour?Several questions:1) This was the "new" Cooper's can, right?
Not the older New Zealand West Coast Pale Ale?2) How long did you leave the wort in the
    fermenter?3) Tempe...

I'm becoming a little disenchanted with MrBeer. I started brewing in January, and like others,
became obsessed. So I bought another "Little Brown Keg" fermenter. The first one quickly
    dented, and got ...

Thanks for the info. Great insight on the Avinatore. I feel like this is the source of my
problems . . .If the beer tasted good when you bottled it, but then went south in the bottles,
    you just might ...

My last two batches (Cowgirl Honey Light and Bohemian Bronze) have both had a sour, citrusy
taste on the finish that made it difficult to enjoy. The only new thing I'd tried with these
    two is the Avin...
