- I've been homebrewing for thirty four years now. I started working at DeFalco's within two months of starting. A few months later, I was working here full-time, a year later, I became the manager. In December 1980, I bought the shop and haven't look back since. I have been on the Board of Advisors for the American Homebrewers Association and have been active in the trade association (now-Fermenters International Trade Association, was-Home Wine & Beer Trade Association) for over 30 years. I am currently serving as the vice president of the association, although the organization seems to be in hibernation mode currently. Over the past three decades, I have helped tens of thousands of customers learn to make their own beer, wine, mead, & cider. Over two dozen customers and employees have gone on to become professional brewers and around ten professional winemakers. Personally, I brew all kinds of beers, but am partial to hoppy IPA's, Porters, and Barleywines.

It's your choice. I brewed a number of beers that used Mr beer refills as a base (even in 5
gallon batches). You could always buy a 5 gallon kit and split it in half. You can overfill the

Yes. Yeast are more active at higher temperatures. And fermentation is an exothermic process,
