  • Went to The Gingerman Pub (had about 100 taps on the wall) and tried some "weird" stuff (keep in mind this was many, MANY years ago). Tried a wheat beer for the first time and fell in love. Could not find wheat beer at any local beer/liquor store (this was way before craft beers became popular), so I did the only thing I could - decided to brew it myself! Some really bad beer was brewed back then trying to learn the skill, but I cracked open the first bottle of my most recent Hefe-Wizen and the taste still takes me back to that first wheat I drank at The Gingerman.

    Just mu $.02 - I have added honey to my fermentor several times with absolutely no infections.
    Honey is naturally resistant to bacteria. Add after high krausen.

    I stir the bajeebers out on my mash and sparge when I first add the water, then wait "about" 10
    minutes to let it settle down. I usually hit 75% efficiency on my batches.

    What's the alkalinity of the water? That could be a huge issue.From memory - it is about 97ish
