The yeast will start fermenting that added sugar. You'll need to wait for stable gravity

Hi Craig. If this is your first time pasteurizing the cider on the stove, err on the side of
undercarbed. Heat, pressure and glass can be tricky. I've not had a bottle blow in dozens of

Bottled a batch of cider tonight, will probably pasteurize it Tuesday/Wednesday/Thursday
