Here's what I do when I keg. I'm not sure gelatin is a good idea for bottling because you want
the beer to be cold which does not work well if you are also naturally carbonating your beer.

Yeast selection and temperature. Higher the temp, faster the ferment but that's usually not a
good thing. Check your yeast for the best temp range.
