I apologize for the vagueness. I am using WYEAST 1056 with a yeast starter plate. The
fermentation begins within 24 hours. I use a blow off line because it gets messy. I let it sit
in a secondary for ...Posted in thread: Simple Cream ale? on 05-12-2013 at 05:20 PM
There's usually a pound or two of flaked corn (or rice) in a cream ale. I think if you bump
that up and remove the carapils you'd be pretty good. You might even cut back a bit on the base
malt too if ...Posted in thread: The joy of homebrewing 3rd edition? on 04-17-2013 at 02:51 AM
My guess is Alcohol by Weight vs Alcohol by Volume. The former used to be more popular, but ABV
is now more typical. And yes it's a good book.Posted in thread: Fermentation done 2.1% abv? on 04-11-2013 at 01:42 AM
I would double check with a hydrometer, maybe the conversion you are using is off for this
beer.Have you tasted it? If it is sweeter than you expect, then you might be stuck. If you are,
you could try...Posted in thread: Fermentation done 2.1% abv? on 04-11-2013 at 01:00 AM

using a h...Posted in thread: Decoction confusion "brew with wheat" on 04-03-2013 at 02:02 AM
Probably accounting for the time it takes to transfer and boil 1/3 of the mash for each step.Posted in thread: White House Honey Ale Issues on 03-30-2013 at 01:13 AM
What about the corn sugar I have dissolved in water that's been sitting in the fridge.. it'll
have been there about two weeks before I bottle, is that okay?Just reboil it for 3-4 minutes
and you shoul...Posted in thread: Your worst beer comp score on 03-26-2013 at 02:41 AM
I got a 23 on an IPA a bit over a year ago, I think a few of the bottles must have had a slow
infection which led to some off flavors almost solvent like. Not a strong off taste, but
clearly there.Posted in thread: White House Honey Ale Issues on 03-25-2013 at 09:22 PM
Well, it might be done, but I'd let it sit another week.Racking to a secondary isn't really
needed with this style of beer. If you like to secondary, wait for the beer to finish first
before you rack....Posted in thread: Bottle bombs? on 03-06-2013 at 03:41 AM
I wouldn't worry yet, excessive foaming early is normal. It takes tim for CO2 to absorb. Take
one bottle and put it in the fridge for 48-72 hours, then see if the foaming is an issue.
Remember, patien...
