Star San is a concentrate. An ounce per five gallons of water I think but you can get away with
using half that and splashign it around. You can also seal it up in a bucket and reuse it for a

well, you should be good but all the kit wines I've bought (which admittedly is only two) have
been for six gallon batches so you need a seven gallon bucket for fermenting and a couple of

Malto dextin is the universal fix for lack of body. Since it's a wit, I'd start with 4 oz

Good luck with the decoction, it's a lot of work but the end result should be worth the
