    So if you don't want an acid reduction you shouldn't cold crash? Or is there some other reason
    to do it and then adjust the acid level later?

    How did you lauter it?I followed the wheat wine recipe on the jack Keller website. I recall it
    had a lot more sediment than I thought it would have.

    I made wheat wine a couple of years ago. I haven't tried it yet but maybe it is about time.

    If it is something that you think you will want to sweeten you could hold back and freeze a
    couple of gallons for that purpose.
