I keep a couple of packs of S-05 in the fridge to have just in case things don't always work
out. I'll try it without the other 2 hops and make a nice Amber Ale for the fall.

Would you still use the Irish Red yeast?I thought about not using the Halletau or Northdown and
calling it an American Amber.

Anything from Sam Adams. I don't get all the fuss. I've tried the Boston Lager, Boston Ale and
