I used a brand new vial of yeast to make the starter, but it's been over a month since it

I used white labs 530. The temps recently have fluxed between 55 and 75. Pretty good temps if

Belgian styles (and most beer) taste much better after a good aging. if you are going to make
complex and/or strong beers, i recommend throwing in some session beers, too. i always like a
