This sounds pretty interesting. Are you worried that fermentation will make you lose the aroma
from the elderflower, or are you going to hit it with elderflower during secondary too?

Sounds like your finished product is less than perfect, but unless it's infected with an
undesirable bug, or the fermentation temps went super crazy, you can probably still salvage

It's been my experience that if you can stand to leave it in the carboy, you'll get more
mileage out of bulk aging than aging in bottles. YMMV though.
