So, I'm waiting on my bottle caps to come in (should be tomorrow). My current question is, once
I back sweeten and bottle, about how long should I wait before cold crashing or pasteurizing. I
    usually ...

Update: So far, so good. The airlock has been steadily bubbling for about 2 weeks. I've added
nutrient once, and stirred every day or two. The gravity has been steadily coming down. As of
    yesterday, i...

I assume this kit is an Oktoberfest Ale, right...as in it came with ale yeast?A true
Oktoberfest is a lager, so you aren't going to match the Paulander style without using a lager

Yes, I meant the 15 and 5 minute. The hops were Pearle and Hallertau. I honestly don't remember
which was which, but one of the types went in pretty early in the brew and the other was half

The temp range on Red Star is big enough to handle that no problem, but of course the closer
you can keep it to the 70 side the better. The acids in the lemons tend to slow fermentation
    once a little ...

I'm really hoping this one will be good. Maybe the wife will like it at least. If not, at least
I'm only out about 5 bucks!

I'm attempting my first batch of hard lemonade. I've done two batches of beer so far and
figured I'd try my hand at something else. I (sort of) followed a recipe I found on here named
    "Extra Hard Lemo...

  • Posted in thread: Second Round Brewer....How's my gravity? on 11-08-2012 at 12:24 PM
Well, I swirled it around a bit, put it in a sink of warm water and it did just a little more.
This morning it was sitting at 1.018. I'll give it the rest of the day, and hopefully, I'll be
    bottling t...
