I don't know of any bad microbes that live in 7.75% alcohol in a likely low PH environment on
top of it. Drink it, if you don't die in a week, serve it. RDWHAHBP.S.Anything that's in there

So I just finished fermenting my first batch of cider. The juice came from a local farm and is
unpasteurized. I added no yeast and instead allowed the wild yeast to do the work. It's in
    secondary now,...

Well, if it was too sweet, mashing longer at 145 (but I"d go with 147/148) should fix it
totally. You don't need 60 minutes at 165, though. I mean, it won't hurt, but it's wasting 45
    minutes of your t...

I use decoction mashing, so yes it probably did take me about 25 mins to raise the temp. The
beer was a little too sweet, but honestly amazing. I am not looking to change it dramatically.

The 145 temperature mash should be greatly increased, and the 165 (mashout) greatly reduced. I
think you have the times backwards there.Do your protein rest at 131-133 generally, and make it
    very shor...

So I brewed a beer a belgian quad about a year ago after reading brew like a monk. The beer
turned out great although it was a bit too sweet, I'm going for a little drier finish this
    time. Anyway I lo...

  • Posted in thread: Rebel Mill- How do I adjust gap size? on 08-29-2014 at 07:14 PM
I think the gap on this mill has slipped. I can't find instructions anywhere on how to adjust
the gap. Anyone have instructions or can anyone provide a good written walkthrough. I just
    don't know what...

Alright so I had a random question pop into my head and I can't find the answer anywhere. When
you drink an aged beer and it says something like 2011 barrel aged stout. What is 2011? Is it
    the year it...
