I have used a thermometer like that without issue - just make sure it's in your boil for > 15
mins so that it won't contaminate anything. Thermometers vary.... some are very accurate, some
are less so...

Anything that spends 15 mins or more in your boil will be sanitized. Even the leaves and bugs
that fly in during the boil (I do my brew outside). Jay

Yeah, that amount of liquid is going to be tough to cool without a chiller... +1 on stirring
