Maybe a stupid question but, did you add 2 gallons of water? Cuz then you would have more like

UPDATE:I finally bottled this. I tried one bottle and it is still VERY VERY STRONG. It will
definitely need to age a lot longer. I should find some commercial meads or get a smple from a
"known good" ...
