I have read this as well. But the trappist breweries are most definitely not trying to create
IPAs with a very "clean" fermentation profile.Very true. Just thought I'd throw a little fuel
on this fire...

I'd mash lower to get better attenuation. To high of an FG on a IIPA seems counter to what a
good drinkable IIPA should be. To that same end, I'd replace some 2 row with simple sugar. I'd
aim for 5-10...

I've used 7-10% in my browns. Always seems like a good level to me.
