hi there i just thought id give you the English point of view ,over here we tend to lean more
towards wine making than beer making, a simple wine like coffee would be ready in about 4 weeks

something ive done in the past and it seems to work,use a thin length of fishing line or nylon
down the inside of the neck of the bottle insert the cork as far as it will go then withdraw
