    i'd do all the malt at the beginning. unless you think bacteria can't remain viable in a dry,

    are you storing it cold or at room temp? makes a difference.I start @ 35-40 first day, and
    shake at least 3 times, and re-pressurize.keep it cold, and slap the gas on it once in a while
