I just attempted my take on this. Used organic Florida came sugar and made invert sugar with
it. Also used willamette hops cause that's what I had on hand- boiled hops and bran together
for an hour. B...

I've got a Belgian Dark Strong with guava and piloncillo sugar and then with 2 oz of Southern
comfort soaked oak cubes added for 2 weeks.

Just a guess, but I think it has to do more with your perception. I don't think it's possible
for the beer to lose it's hoppiness after just one sip like that

I don't think it's undercarbed, but only 1.15 vol is a very low carb. Scottish styles tend to
lean towards very little carb. Also, how long has it been since you bottled? 3 weeks is a
minimum time and...
