I forget all the places I read it now, but I've seen over and over again about the great care
with which Belgian Cafe owners will pour their beer. Not only that every beer is supposed to be
    served in ...

Going to go with this. I'll try this out then next time maybe add a bit of oak in there and
some lacto so simulate fermenting in oak. Adding the zest of Valencia oranges (about 1/2 lb

some of the overall citrus character. Anyway, here's what I wrote:Hi,I've been really impressed

that crazy attenuation they often have. BTW saison yeast strains often produce glycerine during
    fermentati...

I try and turn off my cell phone. As Griz, who used to run the brewshop around here, used to
say, "trying to brew while talking on a cell phone is like a monkey ****ing a football." ...not

I've got a brett-saison type thing fermenting now. I intentionally pushed the temperature high
to get the yeast to finnish up well. I started a thread about the temp concerns with pushing
    the brett th...

  • Posted in thread: Trade: (maybe sell) 20# CO2 Tank, for O2 tank on 07-08-2014 at 07:15 PM
    I've got a empty 20# CO2 tank I'd like to trade. I'd like to trade for an O2 tank. If I can't
find someone who wants to trade I'd sell the tank for $80. Must be local (bay area), or willing
    to meet.

  • Posted in thread: Temperature on a Brett-Saison on 06-26-2014 at 04:04 PM
I killed the heat yesterday, it was down to 1.005 from 1.041. When I tasted the sample, it was
pretty good but had an off note I couldn't put my finger on- cheesey maybe? Any issues with the

I'm fermenting a Citrusy-Saison-Beer (hopefully something in the vein of Hill Farmsteads
