    I'm fermenting a Citrusy-Saison-Beer (hopefully something in the vein of Hill Farmsteads
    "Brother Soigne"). I pitched WLP670 "American Farmhouse", which is a saison strain blended with
    a brett strain....

    So, you're saying that the protein does effect the hydrometer reading but that is offset by the
    water loss?

    When you say "removed water" are you taking about water bound up in the protein or boil-off?
