my dad is a brewer when he was a kid, and he got me into it
in 1995 my dad my best friend and I brewed my first wine, i was more a grape picker and crusher at that time, but i still felt like it was my wine. in 2004 i brewed my first mead, i've always been into older traditional things and mead seemed like an older, more traditional way to brew, the first brew went very well, it was just a simple show mead, came out very clean, before i started brewing my next brew, i met my brewing partner in crime, on this site he goes by scinerd3000, he was impressed by my work, i was impressed just to find another brewer in the area. anyway, been brewing different things with him and on my own, last year i bought four 5 gallon better bottle carboys, and one 6 gallon better bottle, i also have two 5 gallon glass carboys and a 6 gallon drink mix bucket i use as a brew bucket - rose vanilla mead, smoked porter, peach mead,

you could try a wild yeast,most anything containing sugar will ferment if given a little

churn away my friend, i won't say that you can't over aerate, but under aerating will hurt you
just as muchas far as temp goes i wouldn't raise it above 70, more than that is risky buisness
