Quit looking at bubbles, while it will give you an idea about what's going on it in no way
determines anything really, it's just a vent!After 7-10 days take a gravity reading, then take
another 2 days...

Gravity never takes a day off. Are you fermenting in plastic, glass, or stainless? Can you see
a yeast cake, if glass?

I use a 6.5 gallon fermenter for a 5 gallon batch. And... I aerate with pure oxygen before
pitching, so plenty of oxygen in the space. I wouldn't be afraid to try it.
