Also make sure you are reading the temp of the beer, not the ambient fridge temp. Unless you
are using a controller taking the beer's temp your beer might not be as cold as you think. Even

Check the "package date" for your yeast in Beersmith. It sometimes defaults to some wacky dates

If you want it to last as long as possible then distilled water is the way to go. Any hardness
